What is the food that you HAVE TO try in Slovakia?

談到斯洛伐克食物,其中讓我最念念不忘的就是起士了!

起士在斯洛伐克的飲食文化中佔有相當重要的地位,不同於法國的餐後起士盤,斯洛伐克多將起士入菜,且主要的乳製品來源是「綿羊乳」,而非山羊乳或牛乳,許多斯洛伐克傳統菜餚會加入羊奶起士,味道特殊,可說是斯洛伐克的「經典」,以下三種斯洛伐克起士相當常見,而且我個人認為非‧常‧美‧味!如果有機會到斯洛伐克,一‧定‧要‧嚐!

The answer is “Cheese Cheese, Cheese!!”  You thought that there’s only cheese in France? Of course not! Slovakian uses lots of cheese in their traditional dishes, and trusts me, they are VERY tasty.

1) Bryndza

Bryndza是一種軟質羊乳起士,有相當重的羊奶味,在斯洛伐克經常入菜,尤其是到斯洛伐克必吃的傳統菜餚:bryndzové halušky,上面一定有bryndza起士。

Bryndzové halušky是一種馬鈴薯餃,這種以馬鈴薯、麵粉為基底的主食在中東歐相當常見,Bryndzové halušky內餡經常包著濃郁的bryndza起士,盛盤後再淋上起士與培根,這種馬鈴薯吃起來很有嚼勁,起士濃郁的奶香混著煎香的培根油脂,一定要配上一杯解膩的冰涼啤酒,是讓人回味再三的好滋味。

Bryndza is a product of sheep milk cheese, made mainly in Slovakia. It’s very creamy, with strong smell and taste. In Slovakia, they use a lot Bryndza in there traditional dishes.

Bryndza is the main ingredients of bryndzové halušky, one of the national dishes in Slovakia. Bryndzové halušky is a kind of potato dumplings, with bryndza cheese and bacon. You can find it almost everywhere in the traditional Slovakian restaurant.

 

2) Korbáčik

Korbáčik是來自斯洛伐克北部的硬質起士,口感很像台灣的起士絲,經過煙燻,很有嚼勁,而且通常都會綁成辮子!傳統的作法是先將Korbáčik起士做成一條條,然後再編織成辮子或打結成球,味道很好,會讓人一口接一口停不下來!

Korbáčik is a kind of smoked cheese interwoven into fine braids. It’s originated from Orava region of northern Slovakia. It’s solid, chewy, with wonderful smoked flavor. For me, korbáčik is a perfect apéro with beer.

因為形狀特殊,所以也經常有莫名其妙的吃法(玩法)XD

 

3) Parenica

IMG_3057Parenica基本上味道跟Korbáčik起士差不多,同樣是煙燻的硬質起士,但形狀不一樣,Parenica起士是扁形長條,然後捲成像蝸牛殼般的形狀,在斯洛伐克的乳製品店裡經常可買到真空包裝,一口咬下,那層層疊疊的口感令人難忘。

Parenica is also a kind of solid smoked cheese but non-ripening. The color is darkened by steaming, and rolled like a snails spiral.

The taste of Parenica and Korbáčik are quite similar, but because the shapes are different, so the mouth feel are different.(Is also perfect as an apéro with beer!)

以上這三種起士在斯洛伐克都相當普遍,幾乎都是用綿羊奶製作的,然而綿羊奶除了拿來製作起士外,在斯洛伐克,他們也會直接「」綿羊奶!!

These three kinds of cheese are very common in Slovakia; most of them are made with sheep milk instead of goat milk. Talking about sheep milk, Slovaks use sheep milk not just to make cheese, but also can DRINK it.

什麼!喝綿羊奶?

由於綿羊在斯洛伐克相當常見的家畜,飼養綿羊的家庭會將綿羊交由牧羊人託管,而住在山上木屋裡的牧羊人,就使用這些綿羊奶來製作綿羊起士,而那些用剩的綿羊奶,經過「稍微發酵」,就成了斯洛伐克的健康飲品:Žinčica(發音:驚奇茶)

今年九月拜訪斯洛伐克時,朋友開車載我山上拜訪牧羊人,並且嘗了從木桶裡舀出的「新鮮」Žinčica,Žinčica真的是驚奇茶哈哈哈,質地濃稠,喝起來有點像半發酵豆漿,奶味濃郁強勁,帶原味優格的酸,並且意外地帶有一點鹹味。雖然不太習慣,還是喝了好幾口,畢竟都來到斯洛伐克了,什麼都要品嘗看看!

朋友說Žinčica是天然灌腸藥,喝完後會很想跑廁所,在我親身試過後…嗯嗯嗯,非常有效!!!(笑倒)

>> Special Slovakian drink:Žinčica

Žinčica is a drink made of sheep milk, a by-product in the process of making bryndza cheese. Normally you can find it in a shepherd’s house. I’ve tried Žinčica once, the smell of sheep milk is very strong. The texture is thick, not very liquid. It reminds me of “half-fermentation soy milk”. The taste is sour and salty. Honestly, I’m not very used to it, but you’re in Slovakia!! You have to try at least one time, right?

喝Žinčica一定要用專門的木製杯子才道地,用來裝Žinčica的杯子叫做črpák (發音:喬巴),是有手工雕刻的杯子,而杯子上訴說得經常是山林野外的自然故事,朋友說:牧羊人在山上除了照顧羊之外,冬天因為沒什麼事,就都在雕刻杯子。可別小看這些木頭杯,真正的手工črpák可是不便宜呢!在紀念商品店可以看到一些小型črpák,是不錯的斯洛伐克特色伴手禮。

Žinčica normally is served with a wooden cup, črpák. Črpák is often carved with some pastoral scene. You can easily found Črpák in Slovakia; it’s very cute and typical. I think it’s a good Slovakia souvenir.

說了這麼多,我們要上哪去品嘗這些美食呢?

除了驚奇茶比較特別,要到到山上或專門的乳製品店買外,其他的起士在超市或乳製品店都可以找得到,在這裡推薦大家一間可以嘗到斯洛伐克傳統菜餚的餐廳Bratislavska Restauracia,就在首都布拉提斯拉瓦,距離市中心不遠,不只食物好吃道地(連我的斯洛伐克朋友都說好吃),價格也很實惠喔!

Where to taste these delicious Slovakian cheeses?

You can easily find these cheeses in dairy shops or in supermarkets (it depends).But if you want to try some traditional Slovakian dishes you have to go to a traditional Slovakian restaurant.

In Bratislava, the capital of Slovakia, there’s a nice restaurant located in city center and served great Slovakian traditional dishes. You can find nice bryndzové halušky and onion soup there with ideal price.

這間餐廳位於斯洛伐克首都市中心,是由一間歷史劇院改建而成的,內部裝潢典雅漂亮,共有三層樓,第一層樓是酒吧,第二、三層樓是餐廳,開到晚上十二點,所以非常適合跟朋友約一約晚上起去小酌一杯。

我們點了這樣的拼盤,可以嘗到斯洛伐克最道地的bryndzové halušky,還有bryndza起士與酸菜小點。

除此之外斯洛伐克經典特色菜外,我們還點了蒜頭湯,蒜頭湯很濃郁,裡面有加上濃郁起士,可以跟麵包整塊一起吃,非常非常過癮!!

In this restaurant, it offers lots of traditional Slovakian dishes, includes the most typical bryndzové halušky and garlic soup. In Slovakia, they drink a lot of soup, chicken soup, vegetable soup, garlic soup.

The garlic soup in this restaurant is awesome, the flavor of garlic is dense, mix with spices, and of course, with cheese!! You can drink soup and at the meanwhile, eat the whole bread.

蒜頭湯的經典吃法就是要把底部的起士撈起來,牽著絲,與濃郁的蒜頭湯頭一起下肚,保證馬上暖和起來,融化你的嘴也融化你的心!

The typical way to eat a garlic soup is to have it with cheese. Just one tip, you’ll feel warm immediately, and can’t stop drinking it!!!

當然這樣濃郁的斯洛伐克料理,一定要配上一杯沁涼啤酒啦!我們三人一人一杯啤酒、加上傳統料理以及跟臉一般大的蒜頭湯,總計一人只花費6歐元,是不是很驚人又很划算?

所以,來斯洛伐克一定一定要的,就是要吃起士料理,吃飽飽、喝飽飽,盡情享受在斯洛伐克的每一刻。

There’re lots of things to do and to see in Slovakia, but I have to say, food is a very important part in Slovakian culture. You can eat very well and drink very well in Slovakia.
